Well, it is difficult to say unequivocally, because the choice in this matter is extremely difficult. However, there is one dish that can be considered a little favorite. You can meet her all over the country in various forms and with many additions – each is delicious and tempts with its unique taste. We invite you for a short and we hope not the last meeting with khachapuri.
Khachapuri is the quintessence of Caucasian culture, full of severity and simplicity, which on the one hand impresses with its modesty, but on the other, we can discover its amazing beauty and richness with every moment. Even the entry in the native language of Georgians looks like this: ხაჭაპური. Beautiful, right?
So what is this dish? In short, it can be said that it is a kind of bread with cheese inside. Its consistency and texture resemble a soft square, even a flatbread. Of course, we are only talking about the basic version here. You can get it in virtually every store. Of course, there are many variations on the basic version of this Caucasian delicacy. Mainly it is about various fillings – we can meet with stuffed beans, as well as meat. Khachupuri also impresses with its shape: you will meet them as round pies, small loaves and even boats.
There are basically two schools for preparing khachapuri. Some bake them based on yeast dough, while others add soda instead. Both versions are very plump and filling, melt in your mouth. They can be consumed as a separate dish with sauces, e.g. thekmali or adjika, or as an addition to meat dishes. It also tastes great with phali, a starter made of greens, nuts and coriander.
In addition to the basic version, Georgians serve two other types of khachapuri: Ajaruli and Immeruli. The first one is in the shape of a boat, with cheese melting in puffy edges, and inside a lightly cut egg reigns. The other is the imeretinian khachapuri, in the form of a round cake made of cheese dough whose crème de la crème is a filling of baked beans.
While enjoying the khachapuri, of course, don’t forget about a glass of one of the excellent Georgian wines.
