We haven’t published anything in this section for a long time. We were looking for a real bomb that will delight you from the first sight, from the first smell, from the first taste. Finally, you found something worthy of your palate. They say that it tastes like Ethiopia. It is the basis for breakfast, lunch and dinner. Pancake for special tasks. Injera. Enjoy!


Injera. Spongy commando

What bread is to us (in any form), the indjger is a native of Ethiopia and Eritrea. Abyssinian malka, or teff, is the basic crop plant in these countries. As you know, they do not belong to economic powers and people must cope as soon as they can, therefore meals must be satiated and as simple as possible to prepare. The recipe for these gigantic (average diameter 50 cm) pancakes is a real treasure passed down from generation to generation. Injera and teff are a blessing for Ethiopia …

A little digression here. The material that you will see in a moment will certainly destroy your – often stereotypical – idea of ​​countries such as Ethiopia. Have a nice reception.

Approx. We’re back. The round shape is the last resemblance to the pancakes that they usually host on our plates. They are not smooth pies, but spongy and porous colossi, often moist and sour in taste. This is the effect of fermenting the dough, which after mixing the flour with water is left for several days in special dishes. The dough is then poured onto a baking tray or a black clay plate above the hearth ( mitad ), or placed on a special electric oven (so-called lefse griddle ). The effects are amazing!

You can sham them “dry”, although they are most often served in the company of vegetable sauces (spongy texture of indje is ideal for this) or meat stews. Shiro, bayanet, tybs, kurt (not Cobain), misirt-wat, fyrfyr – do these names tell you anything? No? In Ethiopia you will definitely meet with a whole cornucopia of flavors and aromas, which you will not find in native cookbooks.

Indżera is such a spongy commando. You can eat it properly – after all, a full cake is amazing – if you need it will be a large plate, and cutlery can be successfully replaced. Oh, such a pancake-batter for special tasks.

P.S. Injera can also be associated with South America. It’s fair to say that it’s a friendship dish. In the same way as yerba, it is necessary to share the indjara with loved ones and friends. Matero circulates in a circle, everyone takes a sip. Injera also circulates – tear off a piece (only with your right hand, with your left hand is considered unclean), and pass on. Don’t be surprised if someone tries to feed you. This is a sign of friendship and respect. This traditional rite is called gursha.

You can eat it in Ethiopian pubs in Berlin, and you can also visit Abyssinia in Warsaw, but it won’t be the same. A real finder only in Ethiopia! Why? See for yourself …
